Cervaro della Sala is a wine born from a strong belief in the potential of an area suited to the production of great white wines that could stand the test of time. It is one of Italy’s most renowned and awarded white wines. The wine is primarily made from Chardonnay grapes with a small addition of Grechetto grapes. The grapes are grown on the Castello della Sala estate in Umbria, a region celebrated for its unique terroir and winemaking traditions. The grapes are harvested in September, then gently crushed. After maceration is conducted, the resulting must is transferred to stainless steel tanks for clarification before being transferred to barriques for fermentation. The wine ages on its lees for approximately 6 months, followed by additional aging in the bottle. This aging process helps the wine to develop complexity, elegance, and structure. This wine has intense aromas of citrus fruit, yellow floral notes, and a hint of hazelnut. On the palate, it shows a vibrant acidity, a beautiful mineral structure, and a long, persistent finish. Cervaro della Sala’s elegant personality can be paired with rich seafood dishes such as scallops or lobster. It's excellent when served with creamy pasta dishes and chicken or veal entrees. The wine’s acidity and complexity make it an ideal companion to aged cheeses as well.
