Description

Champagne Ayala Brut Majeur is a non-vintage Champagne produced by the esteemed Champagne house, Ayala. Founded in 1860, Ayala is one of the original Champagne houses, known for its focus on Chardonnay-dominant blends and elegant, dry styles. Brut Majeur is their signature cuvée, embodying the house's commitment to quality and finesse.

This Champagne is a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes, sourced from across the Champagne region's finest vineyards. It typically includes a high proportion of Chardonnay (around 40%), which contributes to its elegance and freshness. A significant percentage of reserve wines are included in the blend, adding complexity and depth.

The winemaking process at Ayala is meticulous. The grapes are gently pressed, and the wines are fermented in stainless steel tanks to preserve their purity. The secondary fermentation takes place in the bottle, as is traditional for Champagne, and the wine is aged on its lees for a minimum of three years, developing its characteristic aromas and textures.

Ayala Brut Majeur offers a delicate and refined experience. It displays aromas of citrus fruits (lemon, grapefruit), white flowers, and subtle notes of brioche and hazelnut. The palate is crisp and refreshing, with a creamy mousse and a long, elegant finish. The wine's balanced acidity makes it a versatile choice for various occasions.

This wine is exceptionally well-suited to a wide range of culinary pairings. Its vibrant acidity and fine bubbles make it a perfect aperitif, stimulating the appetite and cleansing the palate. It complements seafood dishes beautifully, from delicate oysters and sushi to grilled fish and shellfish. Its richness also allows it to pair well with creamy sauces and richer dishes, such as lobster Thermidor or roasted chicken. Consider it alongside appetizers like baked brie with fig jam or smoked salmon canapés. For a surprising pairing, try it with hard cheeses like Comté or aged Gruyère, the salty and nutty flavours being elevated by the wine's fruity finish. Its versatility also extends to Asian cuisine, working well with tempura, sushi, and even slightly spicy dishes. The dosage is usually around 7 grams per liter, classifying it as a Brut Champagne, not overly sweet. This dryness contributes to its versatility with food.

Your Notes

A very pleasant surprise! The blend is well-balanced, showing a good acidity and some biscuity notes that I appreciate. Quite versatile and enjoyable.
