Description

Selvarossa is the flagship wine of Cantine Due Palme, a prestigious cooperative based in Cellino San Marco, Puglia. This wine is a profound expression of the Salento region, deeply rooted in its 3,000-year history of winemaking. The name 'Selvarossa' (Red Forest) reflects its deep, intense color and the complexity it derives from its terroir. It is produced primarily from the indigenous Negroamaro grape, which provides a solid backbone, deep color, and rich tannins, blended with a portion of Malvasia Nera, which lends elegance and soft, velvety fruit characteristics. The vines are cultivated using the traditional Alberello Pugliese system—an archaic bush-training method that protects the vines from the intense Mediterranean heat and naturally restricts yields to enhance concentration.

Upon pouring, you are greeted by an intense ruby-red color with scarlet highlights. The bouquet is sophisticated and inviting, offering a complex array of cherry jam, sweet dates, hints of vanilla, and a touch of liquorice, all resulting from a careful 9-month aging process in French oak barriques. On the palate, this wine is full-bodied, enveloping, and warm. The intense flavors of ripe red berries, black fruits, and subtle undertones of toasty oak are perfectly balanced by fine-grained, well-integrated tannins. The finish is remarkably long, warm, and spicy, making it an ideal companion for contemplation or long, engaging conversations.

This wine is a stellar example of southern Italian craftsmanship. It is best enjoyed at a serving temperature of 16-18°C and truly benefits from being allowed to breathe for about 30 minutes before drinking, which allows its full aromatic profile to open up.

Regarding food pairings, Selvarossa is a natural choice for hearty dishes. Its structure makes it a fantastic match for robust red meat dishes, such as braised beef cheek, roasted lamb, or game meats. It also pairs beautifully with rich, tomato-based pasta dishes, hearty stews, and mature, aged cheeses. Whether you are hosting a formal dinner or seeking a 'meditation wine' to enjoy on a quiet evening, Selvarossa delivers a high-quality, authentic experience that captures the sun-drenched power and refined elegance of Puglia.

Your Notes

Intense! The cherry jam and oak are lovely, and the finish lingers nicely. The integrated tannins really elevate it. I'd pair with Osso Buco.
