Red wine | Valpolicella, Veneto, Italy
The Sartori Valpolicella Ripasso Superiore Valdimézzo is a testament to the rich winemaking tradition of the Veneto region. Crafted by Sartori di Verona, a winery with a long-standing history, this wine showcases the unique Ripasso method. This technique involves re-passing Valpolicella Classico wine over the grape skins of Amarone, imbuing it with added depth, complexity, and a velvety texture.
The Valpolicella Ripasso Superiore Valdimézzo presents a deep ruby-red color, hinting at the richness to come. On the nose, it unfolds with enticing aromas of ripe cherries, plums, and a touch of spice. The palate is greeted by a dry, full-bodied wine with a harmonious balance of fruit and tannins. The Ripasso method contributes to a supple texture, a lingering finish, and an increased complexity of flavors. It's aged in oak barrels which give a nice and round taste.
This wine is primarily crafted from a blend of Corvina, Rondinella, and Molinara grapes, indigenous to the Valpolicella region. These varietals contribute to the wine's distinctive character. The winemakers select the best grapes and harvest them carefully. They are then brought to the winery, where the grapes are destemmed and softly pressed before fermentation.
The wine is perfect if you want to combine it with dishes like Pasta with mushroom sauce, grilled meat, or aged cheese. It's best served at 16° - 18°C.
