Sparkling wine | Cava, Spain
Tutum Ba is a captivating and unconventional Cava from the Terra de Falanis project, a winery renowned for its commitment to authenticity and Mediterranean expression. The name itself is a clever play on words—a combination of 'Cava' (to dig) and 'Tumba' (grave)—inviting wine lovers to 'dig your own grave' in the best way possible: by indulging in a bottle of high-quality, artisanal sparkling wine. The whimsical label, featuring a blue elephant appearing to create bubbles with its trunk as it tips over, was designed by Mallorcan comic artist Pere Joan, reflecting the project's creative spirit. Crafted using the traditional method, this Cava undergoes an extended lees aging process of at least 22 months, resulting in a fine, persistent bubble and a complexity often compared to fine Champagne. The grapes are sourced from two distinct, high-quality terroirs: Xarel-lo from old vines in Penedès, and Macabeo and Parellada from high-altitude vineyards (600 meters) in Conca de Barberà. The result is a wine that is incredibly precise and pure, showcasing a delicate balance between powerful structure and crisp, refreshing acidity. On the palate, expect a sophisticated dryness with subtle notes of white flowers, citrus, and a characteristic Mediterranean salinity on the finish. This is an exceptional choice for those who appreciate sparkling wines with personality. It pairs beautifully with a variety of dishes, ranging from classic Mediterranean tapas, such as salted almonds, olives, and cured meats (jamón), to fresh seafood, shellfish, or even light appetizers. Whether you are celebrating a special occasion or simply elevating a Tuesday evening, Tutum Ba offers an engaging experience that is as memorable as its label.
