Sparkling wine | Champagne, France
Champagne Drappier Grande Sendrée is a prestige cuvée embodying elegance and finesse, a testament to the house's commitment to showcasing the terroir of the Côte des Bar. The 2012 vintage, specifically, benefits from a growing season that yielded grapes with remarkable concentration and balance. The name "Sendrée" comes from a plot covered with cinders (cendres) after the great fire that ravaged Urville in 1838. Ironically, it was in fact a variety of wild flower called Sédum, which is known in the local dialect as Sendrée, which gave the place its name. It had long been the tradition to set aside this cuvée for the family’s personal consumption. Its blend is around 55% Pinot Noir and 45% Chardonnay.
Upon pouring, the Grande Sendrée exhibits a delicate mousse and persistent bead of tiny bubbles, a promise of the effervescence to come. The color is a pale gold, hinting at the wine's maturity and richness. The aroma is a symphony of complex notes: delicate floral aromas intertwine with citrus fruits and subtle hints of almond and brioche. On the palate, the wine is crisp and refreshing, with a vibrant acidity that is balanced by a creamy texture. The flavors of lemon, grapefruit, and green apple are complemented by a distinct mineral note, reflecting the chalky soils of the region. The finish is long and elegant, leaving a lingering impression of finesse and harmony. Drappier Grande Sendrée has the potential to age gracefully for many years, developing even greater complexity and depth.
This Champagne is an ideal aperitif, stimulating the appetite and preparing the palate for the meal to come. It pairs beautifully with delicate seafood dishes, such as oysters, scallops, and sushi. Its acidity cuts through the richness of creamy sauces, making it a perfect match for dishes like lobster bisque or risotto with parmesan cheese. It would also be a delightful accompaniment to fresh goat cheese or a fruit tart.
