Le Serre Nuove dell’Ornellaia is often described as Ornellaia’s ‘second vin’, a wine produced with the same passion and attention to detail as its elder sibling. Le Serre Nuove dell’Ornellaia is a real wine, a blend of Merlot, Cabernet Sauvignon, Cabernet Franc & Petit Verdot, combining approachability and a depth of flavour with proven ageing potential. The Ornellaia estate lies a short distance from the Mediterranean coast, in the lee of the hills behind Livorno. Here, the estate’s distinct terroir has proven ideal for Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. The grapes are hand-picked into small 15 kg baskets. Each grape variety and vineyard block are vinified separately. The alcoholic fermentation takes place partly in stainless steel tanks and partly in wooden vats at temperatures between 25–30°C for two weeks. The wine then remains on its skins for about 10–15 days. The malolactic fermentation is started in stainless steel tanks and then completed in barriques (75% new and 25% once-used). The wine remains in barriques in Ornellaia’s temperature-controlled cellars for about 15 months. After the first 12 months the wine is assembled and then returned to the barriques for a further 3 months of aging. After bottling, the wine ages for a further 6 months prior to release.
